Ranch Scallion Mashed Potatoes

INGREDIENTS

  • 1-2/3 cups Hungry Jack® Mashed Potato Flakes
  • 1-1/4 cups water
  • 3 tablespoons butter
  • 2 tablespoons Hidden Valley Ranch dressing mix
  • 1 cup 2% milk
  • 1/2 cup chopped scallions
  • 1/4 teaspoon salt

INSTRUCTIONS

  1. Heat water and butter in a medium saucepan until butter is melted.
  2. Whisk together the ranch dressing mix and milk in a microwave safe bowl.
  3. Add the heated water, butter and potato flakes into the bowl with the milk mixture. Stir to combine, then microwave for one minute or until warmed through. Mix in the scallions with a spoon and season to taste with salt.
