Hashbrown Applesauce Muffins
INGREDIENTS
- 1 carton (4.2 oz.) Hungry Jack® Original Hashbrowns
- 1 cup Hungry Jack® Original Pancake Mix
- 1 cup all purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 3/4 teaspoon ground cinnamon
- 1 cup applesauce
- 1 egg, lightly beaten
- 1/2 cup milk
INSTRUCTIONS
- Heat oven to 350°F.
- Prepare hashbrowns as directed on carton. Set aside
- Whisk egg, applesauce and milk in a separate bowl. Stir in flour mixture and prepared hashbrowns.
- Fill greased muffin cups evenly.
- Combine oats, pecans, sugar, cinnamon and butter in a small bowl. Spread evenly across tops of muffins.
- Bake 30 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
Topping
- 1/2 cup rolled oats
- 1/2 cup chopped pecans
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 2 tablespoons melted butter
