Hashbrown Applesauce Muffins

INGREDIENTS

  • 1 carton (4.2 oz.) Hungry Jack® Original Hashbrowns
  • 1 cup Hungry Jack® Original Pancake Mix
  • 1 cup all purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 3/4 teaspoon ground cinnamon
  • 1 cup applesauce
  • 1 egg, lightly beaten
  • 1/2 cup milk

INSTRUCTIONS

  1. Heat oven to 350°F.
  2. Prepare hashbrowns as directed on carton. Set aside
  3. Whisk egg, applesauce and milk in a separate bowl. Stir in flour mixture and prepared hashbrowns.
  4. Fill greased muffin cups evenly.
  5. Combine oats, pecans, sugar, cinnamon and butter in a small bowl. Spread evenly across tops of muffins.
  6. Bake 30 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

Topping

  • 1/2 cup rolled oats
  • 1/2 cup chopped pecans
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons melted butter
